Building character and complexity

To preserve the freshness and purity of the varietal aromas, alcoholic fermentation takes place slowly at a controlled low temperature of 16°C. At the end of this process, the wine is transferred to oak barrels of the "barrique" type, where it completes its transformation with full malolactic fermentation. This is followed by a six-month aging, which adds structure, complexity and an elegant oak character.
